1.Clarify the application in juice production
A.Remove fruit pulp and solid impurities
a.In the initial processing stage of fruit juice, the juice extracted from the fruit contains a large amount of solid components such as pulp and fiber. For example, in the production of apple juice, the freshly squeezed apple juice is cloudy and contains fine particles of apple flesh. The decanter centrifuge can separate these solid particles from fruit juice by the centrifugal force generated by high-speed rotation. Centrifugal force can cause heavier solid substances to move towards the wall of the centrifuge drum, while lighter fruit juice remains in the central area and is discharged through different outlets, resulting in clarified fruit juice.
b.For citrus juices, such as orange juice, they contain impurities such as citrus pulp and skin fragments. The decanter centrifuge can effectively remove these impurities, making the appearance of the juice clearer and more transparent, while improving the taste of the juice and reducing the graininess.
B.Removal of microbial cells and pectin
a.Juice may also contain microbial cells such as yeast and mold, as well as colloidal substances such as pectin. During the production process of wine juice, grape juice that has not been clarified contains a large amount of microorganisms and pectin. The centrifuge can to some extent separate these microbial cells and pectin, reduce the microbial content in the juice, facilitate the subsequent fermentation process, and reduce the turbidity caused by pectin, thereby improving the stability of the juice.
C.Improve the transparency and quality of fruit juice
a.The transparency of juice can be significantly improved through clarification treatment using a centrifuge. For example, in the production of high-quality pear juice, the transparency of the pear juice processed by a centrifuge can reach over 90%, with a clear and bright appearance, meeting the requirements of high-end juice products. Moreover, this clarification process can also reduce the possibility of sedimentation of juice during storage, extend the shelf life of juice, and ensure that juice maintains good quality for a longer period of time.
2.Application in the production of concentrated fruit juice
A.Preliminary concentrated fruit juice
In the production process of concentrated fruit juice, a decanter centrifuge can be used as a preliminary concentration equipment. It can separate some of the moisture and lighter components in the juice. For example, in the production of concentrated apple juice, the centrifugal effect of a decanter centrifuge can separate some free water in the juice, thereby increasing the solid content of the juice to a certain extent. In general, after initial treatment by a centrifuge, the solid content of fruit juice can be increased from 10% -12% to around 15% -18%.
B.Used in conjunction with other concentration technologies
The decanter centrifuge is usually used in conjunction with other concentration techniques such as evaporation concentration, reverse osmosis concentration, etc. Before adopting evaporation concentration technology, using a centrifuge to remove solid impurities and some moisture from the juice can improve the efficiency of the evaporation concentration equipment. Because pure fruit juice can be heated more evenly in the evaporator, reducing the occurrence of scaling and other problems. At the same time, in the process of reverse osmosis concentration, the juice pre treated by the centrifuge can reduce the risk of clogging of the reverse osmosis membrane, extend the service life of the membrane, and thus improve the economy and stability of the entire concentrated juice production process.
3. Application in juice recycling and reuse
A.Juice recycling during the production process
On the juice production line, there will be some wastewater or residue containing juice, such as wastewater from cleaning fruits and residue left after juicing. A decanter centrifuge can be used to recover juice from these residues and wastewater. For example, when processing strawberry juice, strawberry pomace still contains a certain amount of juice. By using a centrifuge to process the fruit residue, the juice can be separated, and the recovered juice can be reused in production, increasing the yield of juice and reducing production costs.
B.Reprocessing of defective fruit juice
For some defective fruit juices that do not meet quality standards, such as those with excessive microorganisms or slight turbidity, a centrifuge can be used for reprocessing. By centrifugal separation, impurities and microorganisms that cause quality problems can be removed, improving the quality of juice and meeting production standards again, thereby reducing juice waste.
